See my daughter, to the right, getting ready to bake. From lining the muffin pan to mashing the banana, there is so much that they can do to help!Ingredients:2 cups of flour1 Tbsp baking powder1 tsp baking soda? tsp salt2 mashed bananas2/3 cup of oil2/3 cup of brown sugar1 egg1 tsp of vanilla1 cup of blackberries cut in half? cup of chocolate chipsDirections:Mix the flour, baking powder, soda, and salt in a large bowl. In a separate smaller bowl mash the banana and mix in the egg, add the oil, brown sugar, and vanilla. Beat well. Then add the wet ingredients into the big bowl of dry ingredients and stir until just mixed. Add the blackberries and chocolate chips. Scoop into a lined or greased muffin pan (measuring cups work great for little hands to help), filling each about 2/3 of the way full. Bake @ 350° for 18-20 minutes. Makes 12 medium muffinsNote: Why haven't I been posting a cookbook citation along with each recipe in this series? Well, because this series features recipes that are truly my own. While based on well-recognized basic recipes, the ones shared in this series are customized with specific ingredients reflecting my and my family's tastes. And I encourage you too to experiment and have fun and so customize these recipes to best please your and your loved ones' palates.~Posted by Dana Weber, Library Connect Marketing Intern, Elsevier, San Diego; d.weber@elsevier.com Celebrate Women's History Month!
